Creamy or more brothy, pasta and potatoes is a typical dish from Campania that, thanks to the luxury of its simplicity, has managed to conquer all of Italy.

To prepare this recipe, start by peeling the potatoes. Cut them into cubes and rinse them under running cold water to remove excess starch. In a large pan, fry a fine chop of celery, carrot and onion in a drizzle of oil. Cut the bacon into cubes and add it to the fry. At this point add the potatoes and stir well, adjust with salt and pepper and then cover with water or broth.


When the liquid comes to a boil, add the mixed pasta and cook it by adding, if necessary, a few ladles of broth or boiling water. When the pasta is cooked, add the scamorza cut into cubes.
