4 fillets of oil-packed anchovies
1 yellow pepper
2 ripe and firm plum tomatoes
60 g of Taggiasca olives
Extra virgin olive oil
Red wine vinegar

Description

The Nicoise salad is a French recipe that is rich and appetizing, ideal even for the most formal occasions when in summer you need to bring a simple but at the same time elegant cold dish to the table.

Like all salads, the Nicoise one is prepared in a short time and contains fresh and tasty ingredients. Along with all the other ingredients that make it up, there are tomatoes excellent in summer thanks to their properties and their Mediterranean taste.

No particular skills are needed to prepare a great Nicoise salad, but it is necessary to cook hard-boiled eggs correctly. Finally, to make your Nicoise salad even more beautiful, you can enrich it with colorful edible flowers.

Procedure

Peel the potatoes and cut them into cubes, then boil them in boiling water until they are cooked, but still slightly al dente. In the same water, blanch the green beans after trimming them.

When they are cooked and crispy, drain the green beans and immerse them in water and ice to stop the cooking and to keep their bright green color intact, because the eye also wants its part! Prepare the hard-boiled eggs and then peel them.

Put in a beautiful salad bowl the potatoes, green beans, tomatoes and eggs cut into wedges, the tuna, anchovies, the cleaned and sliced pepper and the olives. Season the Nicoise salad with oil, vinegar, salt and pepper and serve it with crispy bread croutons.
