320 g of macaroni
6 small artichokes in oil
One shallot
A tablespoon of tomato concentrate
White wine as needed
Extra virgin olive oil as needed
Fresh parsley as needed

Description

Macaroni with artichokes and sausage is a perfect pasta first course for a dinner with friends or a family lunch: everyone will really love it!

The full-bodied but light taste of the Chicken and Turkey Luganeghe – excellent chicken and turkey sausages – pairs perfectly with the delicate flavor of the artichokes, for a sauce to try. In this recipe we propose a short pasta format, but you can use whatever you prefer: the important thing is to opt for a rough pasta, because it will best capture this really tasty condiment.

Here are the ingredients and procedure to make macaroni with artichokes and sausage.

Procedure

Finely slice the shallot and fry it in a pan with a drizzle of extra virgin olive oil. Cut the sausage into pieces and add it to the sauté, lightly brown it by crushing it with a fork and deglaze with a little white wine.
Also add the tablespoon of tomato concentrate, mix and let it cook for a few minutes over low heat.

Drain the artichokes well from their oil, then cut them into thin strips and add them to the pan with the sausage; salt, pepper and continue cooking for 5 minutes.
Boil the macaroni in salted boiling water: you can use the cooking water to dilute the sauce and facilitate cooking.

Once ready, drain the macaroni and pour them directly into the pan with the artichoke and sausage sauce, add a handful of chopped parsley, mix and serve.
