You can prepare your fried sage with a classic batter, perhaps enriched with beer to give even more crispness, or immerse it in a mixture of eggs and flour.

Procedure

Wash the sage leaves under running cold water, then arrange them on a clean, dry kitchen towel and pat them dry with paper towels until they are perfectly dry.

Prepare the batter, by putting the flour and eggs in a bowl, beat vigorously until you get a not too thick mixture.

Heat the frying oil in a high-sided pan. Dip the sage leaves in the batter and drain them on the edges of the bowl to remove the excess mixture. When the oil is boiling, fry the sage until it is crispy and amber, it will take a few minutes.
