Description

From the gourmet kitchens of great chefs, the fried egg yolk has arrived in everyday homes with its easy and quick recipe. The methods for cooking eggs are different, from the cooking times of hard-boiled eggs and those of coque, passing through the poached eggs to those in cocotte, the choice is wide.

But if omelettes and scrambled eggs seem too common to you, here's how to prepare the highly sought-after fried egg yolk!

 

Procedure

Open and pour the eggs into a bowl, being careful not to break the yolks. In another bowl, put the breadcrumbs. With your hands, take one yolk at a time (which will separate from the white) and put it in the breadcrumbs. With the help of a teaspoon, cover the egg yolk always being careful not to break it.

Once breaded, fry the egg yolk in boiling seed oil that you have put in abundant quantity inside a high-sided saucepan. When the egg appears golden and crispy, drain it with a slotted spoon on a sheet of kitchen paper and serve it hot and salt it at the last moment.

Suggestions

To keep the yolk soft and the crust even crunchier, once breaded, put the egg yolk in the freezer for half an hour. This way you can slightly prolong the cooking and the yolk will still remain soft.

The extra touch
For a more aromatic flavor, add a chopped mix of aromatic herbs of your choice to the breadcrumbs.
