Dried Apricots with Stracchino, Sausage and Pomegranate

There is no better way to start the New Year's Eve dinner with a tasty, elegant aperitif that is also a good omen for the new year. The dried apricots with stracchino, sausage, pomegranate and rosemary, are small bites that will give your New Year's Eve aperitif a unique flavor.
Preparing these finger foods is really simple and you can arrange them on a cutting board or on a nice tray along with tartines and crostini perhaps stuffed with chicken pate or ham pate.
Here's how to prepare dried apricots with stracchino and sausage!
Procedure
Shell the sausage and brown it in a pan with a drizzle of oil and a sprig of rosemary, until it forms a crispy crust.
Rinse the dried apricots quickly under warm water, then dry them with a clean kitchen towel. Brush them with a drizzle of oil and bake them for 2 minutes at 170°C.
Cover the apricots with a teaspoon of stracchino, pomegranate seeds, sprigs of rosemary and some pieces of sausage.

Suggestions
In alternative to dried apricots, you can use plums or figs always considering the rehydration step that will not take much time.
