Description
The broad bean macco is one of the oldest Sicilian recipes, a typical dish of poor peasant cuisine that boasts distant origins that go back to ancient Greece. This recipe gets its name from the Latin verb maccare which means to crush: in fact, in the preparation, the broad beans are crushed to obtain a thick cream. The broad bean macco can be eaten alone or in combination with pasta. The recipe we propose indeed includes the use of spaghetti and an extra ingredient: the bacon that will add an extra touch of taste to an already perfect dish.

Procedure
After washing the broad beans, soak them in a bowl full of cold water for about 2 hours. In the meantime, dice the carrot and celery.
Slice the onion thinly and then sauté the vegetables in a pot with a drizzle of EVO oil and the garlic clove. Brown for a few minutes and then add the drained broad beans, the rosemary and a bit of chopped fennel. Brown the ingredients and then cover with water and a lid to cook on low heat until the broad beans start to break down. Be sure to stir occasionally until you have obtained a thick cream.
Now cut the bacon into pieces and brown it in a pan to make it crispy. Break the spaghetti into pieces and add them to the cream along with a pinch of salt. Cook the spaghetti and once cooked, let it rest for 5 minutes, season with a drizzle of oil, a grind of pepper and serve. Enjoy your meal!
