2 beaten eggs

Soft-boiled, poached or sunny side up, there are many ways you can cook eggs, and many occasions when you can enjoy them (from a brunch to a American breakfast) and today we want to suggest one more way to bring them to the table: the gourmet recipe for breaded eggs. It is a delicious preparation with a gourmet touch that everyone will love.

Here's how to prepare breaded eggs

In a saucepan boil the water and then add the extra fresh large AIA eggs.
Lower the heat and let the eggs simmer gently (avoiding the shells from crumbling). Let the eggs simmer for 5 minutes and then drain them gently to stop the cooking by putting them in iced water (in this way the egg white will be firm while the yolk soft).

You can now shell the eggs and pass them in the plate where you have poured the two beaten eggs. Then make a further pass by passing them in a plate with breadcrumbs. Now fry the eggs in a pan with plenty of extra virgin olive oil until their surface is well browned. Blot with absorbent paper and serve hot together with a sprinkle of salt and pepper.
