Asparagus is one of the vegetables of the spring season that you can propose in many different preparations. Natural, boiled, fried or sautéed, they are always a welcome side dish. In this recipe, you will discover how to make a perfect breading for asparagus, which will not come off during cooking, and you will have in a few minutes a light but at the same time very tasty dish.

Wash and clean the asparagus well, removing the hardest parts of the stem, then blanch them for a couple of minutes in unsalted water; drain them and let them cool.

In a deep dish, beat the AIA Bio Vita Fresh Eggs with a fork, without adding seasonings; in another dish, instead, mix the breadcrumbs with the cheese, a pinch of salt, a grating of pepper and the oregano.

Then pass the asparagus first in the flour, then in the beaten egg and finally in the breading.

Once you have breaded all the asparagus, arrange them on a tray covered with baking paper and season them with lemon juice, a drizzle of extra virgin olive oil and a little more salt.

Bake at 180°C for 15 minutes: if you want a final crunchy result, spend the last 5 minutes in grill mode.
