Description

The versatility of BonRoll allows you to always prepare it in different ways, from the most traditional Sunday lunch BonRoll to much more creative versions like these slices of BonRoll with sunny-side-up egg, grilled asparagus and bell pepper sauce.

This is a very easy and also quick recipe, just cook the BonRoll in a pan to create an elegant and fun main course. You can also serve this dish as a single course in a dinner with friends, who will be pleasantly surprised by the taste and colors!

Wash the bell peppers well and bake them at 200°C for 30 minutes. After this time, wrap them in a sheet of aluminum foil and let them cool. Remove the skin and seeds of the peppers and cut them into strips. In the blender glass put the peppers, a drizzle of extra virgin olive oil, lemon juice, garlic, a pinch of salt and a grind of pepper and blend until you get a dense and shiny cream.

Clean the asparagus by peeling the white part with a peeler, then blanch them in boiling salted water for 5 minutes, then transfer them to water and ice to fix the color and cool them down.

In a pan, heat a drizzle of oil and sauté the asparagus for a few minutes with a sprig of marjoram. In the same pan where you cooked the asparagus, prepare the sunny-side-up eggs. Slice the BonRoll and cook them in a pan with a drizzle of extra virgin olive oil.

Arrange the bell pepper sauce on the plate, place 5 asparagus on top, a slice of BonRoll and cover with the egg. Season the yolk with some flake salt, dress with a drizzle of raw oil and decorate with some fresh marjoram leaves.
