400 g zucchini

Description

Procedure

First, boil the black rice in a pot with plenty of salted water. Once ready, drain it and let it cool. Dice the AIA chicken breast and cook them in a pan with a drizzle of EVO oil and the shallots. Sprinkle with white wine and cook for another about 15 minutes. Season with a pinch of salt and pepper.

Wash the zucchini and cut them into chunks, cook in a pan with a drizzle of EVO oil for a few minutes. Now season the black rice with a drizzle of oil, the juice of a lemon and add the chicken, the zucchini seasoning with basil and mint.
