Clean the fennel, wash it well and cut it into thin slices. Place the fennel in very cold water so that it maintains its crispness.

Peel the orange to the flesh, cut it into cubes; obtain the orange and lemon zest in small curls. Of the citrus peel, take only the colored part (the white part would be bitter).

Wash the salad well, then prepare an emulsion with three parts of extra virgin olive oil and one part of lemon juice. Add a pinch of salt, a grind of pepper and mix vigorously with a whisk until you get a thick sauce.

Arrange in the plate the slices of AeQuilibrium of Baked Chicken AIA, add the fennel and the orange and season with the obtained sauce. To decorate add the tufts of salad and the citrus zest.
