3 extra fresh large AIA eggs
8 zucchinis
100 g of 00 flour
25 g of Grated Parmesan
Salt
Pepper
Extra virgin olive oil as needed

Description

After washing the zucchinis, remove the ends and cut them lengthwise, so as to obtain many strips. In a bowl, beat the eggs adding the grated Parmesan, salt and pepper, mixing well.

Pass the zucchinis first in the flour and then in the beaten eggs: fry them then, two at a time, in a non-stick pan full of boiling extra virgin olive oil. Once they are well browned, place them on absorbent paper, season them with a pinch of salt and serve.
