Here's how to make the sugar coal to fill the Befana stocking!
Procedure
In a non-stick pan pour 300 gr of granulated sugar, adding a little water so that it can dissolve and heat on a low flame. In the meantime, focus on preparing the icing: whip an egg white until stiff, add the remaining sugar and a pinch of black food coloring powder.
As soon as the caramel takes on a brown color, add the just obtained icing and lower the flame, stirring well until the mixture begins to swell. At this point all you have to do is pour the content into a mold and let it cool. Once it has cooled to the right point, cut it into pieces and use your sugar coal to fill the Befana stocking.
