First, finely chop the onion. In a non-stick pan, pour a drizzle of extra virgin olive oil, the chopped onion and sauté for about 5 minutes before adding the tomato puree and a pinch of salt. Cook for about 5 minutes.

Open the eggs into the tomato one after the other and adjust with salt and pepper. Stir well so that the mixture solidifies and becomes homogeneous and serve.
