Procedure
First, slice the onion into thin slices and do the same with the celery and carrot. Sauté these ingredients in a non-stick pan with a drizzle of oil for a few minutes. Cut the AIA rabbit into parts and pass the pieces in the flour and then lay them in a casserole with the previously obtained sauté. Brown for a few minutes, then deglaze with a glass of white wine and season with a pinch of salt and pepper.
Add the tomato pulp now, mix well and cover with the lid to cook for about 40 minutes. Wash and slice the champignon mushrooms, chop the garlic clove and parsley and sauté them in the non-stick pan with the remaining oil. Add the mushrooms and cook them for about 5 minutes. Then pour them into the casserole with the rabbit, mix well, cover and cook for another 10 minutes.
