Description

The pork cutlet with bacon and grilled pineapple is an easy main course to prepare, which does not require great cooking skills. In just under an hour, you will bring to the table a slightly different pork meat specialty, full of flavor!

The fundamental ingredients for the perfect success of this summer recipe are the delicious AIA Pork Fillet Cutlet, the exquisite AIA Bacon Slices and a good pineapple, which must be ripe at the right point.

But how to understand if the pineapple has actually reached the optimal degree of ripeness? You have two methods:

1. The scent: bring the pineapple to your face and, if you smell a sweet and fragrant smell, the pineapple is ripe. On the contrary, a more intense, fermented and almost alcoholic smell is a sign of a fruit that is too ripe.

2. The leaves and the appearance: choose only fruits that have bright green leaves and a general yellow-brown color; if the pineapple is very green on the bark, however, it could still be unripe. A reddish color of the fruit combined with dry and brown leaves finally indicates a pineapple that is rotting.

Now that you have everything you need, all you have to do is try this special sweet and sour recipe, a bit different from the usual, which deviates - in a pleasant way - from the flavors we are used to knowing.

Procedure

Put the AIA Pork Fillets in a baking dish with a drizzle of extra virgin olive oil and the garlic cut into slices. Sprinkle the meat with the paprika, add the rosemary and season with salt and pepper to taste. Cover the baking dish with cling film and let it marinate in the refrigerator for 30 minutes.

In the meantime, take care of the bacon: heat the griddle or grill well and lay the AIA Bacon Slices one at a time, searing them on both sides until they are crispy. Once ready, keep them warm.

Now clean the pineapple and cut it into slices, removing the harder central part and the dark outer residues. Then sear the pineapple rings on the hot grill, 2-3 minutes per side, until they have a caramel-colored surface.

After the necessary time, remove the meat from the refrigerator and heat two tablespoons of extra virgin olive oil in a non-stick pan, also adding the rosemary from the marinade. Add the pork cutlet, raise the heat, sprinkle with the white wine and let it evaporate. Cook for about 5 minutes, until the slices are cooked: in the last minute of cooking, also add the bacon and pineapple to the pan

Suggestions

If you prefer, you can cook the AIA Pork Fillet Cutlet also on the barbecue: lay the fillets on the already hot grill and let them cook for about 10 minutes, turning them from time to time.

Don't you love grilled pineapple? You can turn it into a tasty sauce! Just cut the pineapple into small cubes and quickly cook it in a saucepan with two tablespoons of honey and one of rum. After 10 minutes, filter and then transfer the mixture to the blender with a drizzle of oil: blend until you get a sauce.

To give an oriental touch to the dish, sprinkle the meat with soy sauce instead of wine. If you choose this variant of the recipe, remember not to overdo it with salt because soy sauce already has a high saltiness!
