After cleaning the eggplants, cut them into cubes. Also cut the cherry tomatoes in half. Finely chop the onion.


Brown the bacon in a pan with a drizzle of oil to make it golden. Add the chopped onion, the eggplant cubes, the cherry tomatoes, a pinch of salt and a little water. Cover the pan with the lid and let the ingredients cook over low heat (stirring occasionally).


In a pot, boil the water and then add a handful of salt and the pasta to cook. Once both the pasta and the eggplants are cooked, drain the pasta and add it to the eggplant sauce.
