Gnocchi is one of those dishes that smells like family lunches and dinners with friends. Making them at home is not difficult, in fact it will allow you to bring to the table a first course made with your own hands and based on genuine ingredients. In addition to the traditional recipe, we want to reveal a truly original one, perfect for the colder season: pumpkin gnocchi. The pumpkin, rich in properties and really tasty, will be the main ingredient of an inviting and delicious first course.

First of all, clean the pumpkin, removing the skin and seeds and bake it in the oven for about 40 minutes at 200°C. Once the pulp is cooked, reduce it to a puree with the help of a potato masher and let it cool for a moment. Then pour the pumpkin puree into a bowl together with the flour, the egg, a pinch of salt and one of sugar. Work well until you have obtained a compact dough. Divide the dough into parts and with each create long strips that you will cut into pieces of about one and a half centimeters that will serve you to make the gnocchi.


Continue to create the gnocchetti until the end of the dough. Finally, using the tines of a fork, press on each gnocco to create the typical lines. Your gnocchi are ready to be cooked! You can cook them with a very simple butter and sage sauce that will allow you to fully savor all the flavor of the pumpkin.
