Procedure
First of all, clean the pumpkin, removing the skin and seeds and cut it into cubes.
Take a non-stick pan and fry the onion cut into thin slices and the AIA bacon cut into pieces together with a drizzle of extra virgin oil. As soon as the onion has wilted, add the pumpkin and sauté for a few minutes.
Then add a drop of water and continue cooking for another 10 minutes. Once the pumpkin has softened, put it in the blender and blend together with the Parmesan to obtain a homogeneous mixture.
Cook the gnocchi in plenty of salted water, drain them and pour them into the pan together with the pumpkin cream just obtained, sautéing them for a few minutes.
