The oil-free mayonnaise is a very simple recipe to prepare: it is a lighter version of the famous egg-based sauce.
The homemade light mayonnaise without oil allows you to tastefully accompany meat and fish dishes (hamburger, shrimp, boiled or baked fish) or side dishes based on potatoes and vegetables. The oil-free mayonnaise is a fairly simple and economical recipe, which requires few ingredients and a limited preparation time, but requires a minimum of attention in the procedure: here's how to prepare it.
Procedure
Break the AIA fresh eggs, separate the yolks from the egg white and set them aside. Meanwhile, heat in a saucepan 150 ml of water, adding a pinch of salt, a tablespoon of mustard and possibly a bit of pepper.
In the meantime, separately, dilute the remaining water in the cornstarch (which can also be replaced with rice flour), using a spoon or a spatula. When the water with salt and mustard begins to boil, slowly pour the diluted cornstarch, stirring with a manual whisk or with a food processor, making sure to work the mixture well to dissolve any lumps present. Continue until you get a homogeneous, smooth and thick mixture, the consistency of a cream.
At this point, turn off the heat: first add the lemon juice, then the vinegar and finally the yolks. When pouring the egg yolks it is important to avoid that the mixture is boiling, because they must not set. To avoid this inconvenience, an alternative to cooking on the stove can be cooking in a bain-marie.
Continue stirring until the desired density is reached and then let it cool.
