Prepare a classic Genovese basil pesto. Cook the couscous following the instructions on the package, then season it with the pesto.

Cook the AIA Rabbit Hamburger on the grill until it is cooked and crispy on the surface. Heat a saucepan in a water bath, then remove it from the heat and pour in 2 yolks and the juice of half a lemon for the preparation of the fricassee sauce. Stir well until the sauce thickens well.
