500 g of mascarpone
125 g of granulated sugar
5 egg yolks
50 ml of water
Bitter cocoa powder to taste

Description

A delicious dessert to enjoy at the end of a dinner with friends or as a snack when you feel like something sweet and very tasty: it's the mascarpone cream, really easy and quick to prepare.

With the use of mascarpone, granulated sugar and AIA extra large fresh eggs, the result is guaranteed.

Here then is the original recipe for mascarpone cream!

 

Procedure

First, put the egg yolks in a planetary mixer and, in the meantime, take a saucepan and pour in the water together with the granulated sugar.

Stir carefully and bring to a temperature of 121°C, helping yourself with a kitchen thermometer. Before reaching the exact temperature, start whipping the yolks in the planetary mixer.

Once you reach 121°C, gradually pour the syrup obtained previously on the yolks and continue to whip. Whip until the mixture of ingredients cools down and, in the meantime, soften the mascarpone in a bowl with a spoon.

Add the whipped yolks to the mascarpone now and mix with the help of a spatula, making movements that go from bottom to top.
