3 medium fresh Pastagialla eggs
150 g of sugar
1 tablespoon of honey
170 g of flour
Zest of 1 lemon
Zest of an orange
1 sachet of baking powder
170 g of butter
1 pinch of salt

Melt the butter in a bain-marie, sift the flour and put it in a large bowl. Add the sugar to the flour, the pinch of salt, the baking powder and the finely grated citrus zest. Mix the ingredients and add the melted butter, mix and add the eggs.

Mix well until you get a homogeneous mixture to which you will also add the honey. Let the dough rest in the refrigerator for about 1 hour. After this time, pour the mixture into the madeleine molds (shell-shaped) and bake at 180°C for 15 minutes.
