2 carrots
2 potatoes

Description

The chicken broth is a basic recipe of our cuisine, very easy to prepare and suitable for many recipes; making broth is fundamental in the kitchen, in order to flavor dishes such as risottos, barley soups, roasts and fish soups, but also to consume fresh pasta, perhaps homemade, like cappelletti, tortellini or ravioli. The broth is therefore considered a basic dish and at the same time a real ingredient, which is obtained from the boiling of meats, vegetables and fish. Once prepared it can be stored in the fridge for 2-3 days, or frozen, for a maximum of 4 months.

Furthermore, perhaps not everyone knows that the chicken broth has an anti-inflammatory effectiveness and is therefore very suitable in case of flu or fatigue (typical of the winter season). By boiling a chicken some proteins that help the immune system to strengthen are dissolved in the water; it would be even better to add to the broth garlic and chili pepper, for their disinfectant power

Procedure

To make homemade chicken broth, take the chicken and cut it into parts, then take a sufficiently large pot and fill it with 2-3 liters of cold water before adding the meat.

Add the onions, carrots, bay leaves, garlic, celery, salt, parsley, pepper and tomato. Cook everything for a couple of hours at moderate temperature: after about 2 hours check the cooking of the chicken; if it seems cooked, remove the chicken, put it on a plate, remove the skin and fillet it. After chopping it, put it back in the pot and mix well.
