Procedure
First, make a well in the flour and create a hole in the center where you put the sugar, the soft butter, the pinch of salt, the spices, the lemon zest and the eggs.
Quickly work the dough with your hands, form a loaf and wrap it in cling film. Let it rest in the refrigerator for about 30 minutes.
After resting, flour your work surface and take a small amount of dough. Roll it out with the help of a rolling pin to a thickness of about 1/2 cm.
Now shape the cookies, place them on a baking tray covered with parchment paper and bake them in a hot oven at 180°C for about 10 minutes.
Once cooked and cooled, you can glaze the cookies.
Prepare the royal icing by putting the egg whites and a few drops of lemon in a bowl. Start the whisks and when the egg white is well whipped, gradually pour in the sifted icing sugar. Continue to whip the icing until you have a smooth and lump-free mixture.
You can always add a few drops of food coloring (powder or gel) for a colored icing!
Now transfer the icing to a piping bag with a fine nozzle to decorate your cookies in a fun and entertaining way.
