350 g of dark chocolate
100 g of butter
250 ml of water
100 ml of liquid cream

Description

The Charlotte cake is a great classic among the sweets of French pastry. It may seem difficult to make, but it's not really!

To create this dessert as good as it is spectacular in its presentation, you just need to get the right ingredients and follow our recipe step by step. The contrast between the sweet biscuit base and the soft and slightly bitter consistency of the dark chocolate mousse will win you over.

Procedure

Start by making the base of the Charlotte: take 2 eggs and separate the yolks from the whites, then pour these latter ones together with 50 grams of sugar into the planetary mixer, then whip until stiff. Also add the yolks and continue to whip. Finally, slowly add the sifted flour and mix again with a spatula or a wooden spoon.

Pour the obtained base into a springform pan, then sprinkle the surface with the remaining 20 grams of sugar: bake at 170°C for about 10 minutes (fan mode).

While the base is cooking, prepare the mousse: melt the chocolate with the butter in a bain-marie, then add the boiling water and mix everything well.

Transfer the mixture to a cold bowl with some ice cubes, then blend with the whisks at maximum speed.

Fill your biscuit base with the mousse, level the surface with a spatula and remove the edge of the cake pan.

Decorate the circumference of the Charlotte with the ladyfingers cut in half, keeping the round part upwards.

Whip the cream until stiff, transfer it to a pastry bag and finish your cake with tufts of cream on the surface.

Transfer the Chocolate Charlotte to harden in the refrigerator for at least 30 minutes before serving it.
