Description

Prepare a great Chinese fried chicken with AIA chicken drumsticks

Procedure

1

Debone the drumsticks and cut the chicken into pieces, without removing the skin.

2

In a bowl make the sauce for marinating the chicken: mix the soy sauce, salt, finely chopped garlic and ginger, 1/2 tablespoon of rice wine, a little sugar, a tablespoon of olive oil and black pepper.

3

Add the chicken pieces and mix well. Cover with cling film and let it rest for at least 30 minutes.

4

Then combine in a deep dish 3 tablespoons of cornstarch and 3 tablespoons of flour and mix.

5

In another bowl break two eggs and beat them with a fork. Pass the chicken in the powder mixture and then in the beaten eggs. Repass everything in the powders and place on a plate.

6

Heat plenty of olive oil in a wok until it reaches 150°C. Fry the chicken, constantly turning it and draining it as soon as it turns golden. Transfer the fried chicken to absorbent paper and turn up the heat to bring the oil to 180°C. Fry again for about a minute.
