Chicken slices with sun-dried tomatoes

Here is a simple recipe but with a really inviting taste, to be made with Very Thin - AIA Chicken Breast Slices, sun-dried tomatoes, pistachios and a fragrant basil-flavored oil.
This chicken-based second course is perfect for both a quick lunch (at home or to take to the office) and a light dinner: try to create this recipe at home, it's really easy!
Procedure
First of all, you need to make a basil-flavored oil at home with which you will flavor the tomato-based dressing for the chicken.
Put about ten leaves of fresh basil in a bowl, crush them with a pestle, then cover with extra virgin olive oil and let it rest for at least 30 minutes.
In the meantime, chop the sun-dried tomatoes with a knife and do the same with the pistachios (which you will have already shelled); put both ingredients in a deep dish or in a bowl, season with a pinch of pepper and mix.
As soon as the flavored oil is ready, filter it and use it to mix well the dressing based on tomatoes and pistachios.
Now you can cook the chicken: pour a drizzle of extra virgin olive oil in a large non-stick pan, heat it and then remove the excess with a sheet of kitchen paper. Lay the Very Thin - AIA Chicken Breast Slices in the pan and cook them for 2 minutes per side, salt them, then transfer them as they are ready on a plate and cover them with a lid so that they remain hot.
When you have finished cooking all the Very Thin - AIA Chicken Breast Slices, lightly brown the chopped tomatoes and pistachios in the pan and then spread it over the chicken slices.
