This is a preparation in which the AIA Spinach BonRoll is accompanied by a fresh and unusual avocado mayonnaise with a very delicate taste. The peppers give crunchiness to the dish and their sweet and sour taste adds a unique touch to the recipe.

Procedure

Put the AIA Spinach BonRoll in a baking dish, season it with a drizzle of extra virgin olive oil and half a glass of water and bake it at 180°C for 70 minutes, covering it with aluminum foil for the first 50 minutes.
In the meantime, clean the peppers from seeds and internal filaments and cut them into strips.

In a non-stick pan, heat a drizzle of extra virgin olive oil, add the peppers and sauté them for a few minutes, then add a glass of water, sugar, vinegar and adjust with salt and pepper. Cook for 10 minutes with the lid on.

Now dedicate yourself to the avocado mayonnaise: peel the avocado and put the pulp cut into pieces in the mixer glass, add the lemon juice, salt, pepper and emulsify by pouring the oil in a thin stream until you get the consistency of a classic mayonnaise.

Remove the AIA Spinach BonRoll from the oven and let it cool before cutting it into slices about 1 cm thick. Pass the slices of AIA Spinach BonRoll in the pan with a drizzle of oil and then arrange them on the plate.
