Procedure
First of all, prepare the batter. In a bowl, beat the Aia eggs with water, flour, salt and pepper to obtain a homogeneous mixture. Then, cover the container and let it rest in a cool place for half an hour.
Clean the artichokes by removing the outermost tough leaves and keeping only the tender part inside. Cut the artichokes into wedges, remove the choke, and then slice them thinly.
Fillet the stems and divide them in two. Immerse them together with the artichoke slices in water and lemon. After draining the slices and stems, blanch them for a few minutes in salted water. Drain them and let them cool.
Now heat plenty of oil in a pan and fry the artichoke slices and stems gradually after dipping them in the batter. Cook until you have achieved a uniform golden color. At that point, remove them from the pan with a slotted spoon and dry them on kitchen paper.
