Procedure
Beat the two eggs in a bowl with the grated cheese (aged cheeses like Grana Padano or Parmigiano Reggiano are fine), a pinch of salt and one of pepper.
If you are looking for a perfect result, use hand whisks to mix the ingredients.
When the mixture is homogeneous, pour it into a pan with very little extra virgin olive oil and proceed with cooking as you would with scrambled eggs (here all the steps).
As soon as the eggs are cooked, transfer them to a plate and let them cool well.
Now wash the arugula, chop it and add it to the plate with the eggs, then also add the scamorza cut into small cubes and, if necessary, adjust the salt; mix all the ingredients well, crushing the mixture with a fork, in order to create a filling.
Then take the slices of AIA Baked Chicken Breast and stuff them in the center with a generous spoonful of egg and cheese mixture, then roll them up on themselves and secure them with a wooden toothpick.
Arrange the rolls on a baking sheet covered with parchment paper and bake for a couple of minutes at 200°C: when the cheese has melted, remove from the oven and serve!
