1 pack of AIA Chicken Fillet Slices
1 AIA Extra Fresh ground-raised Egg
150g of ricotta
3 tablespoons of grated Parmesan
Breadcrumbs
Salt and pepper to taste.
For the yogurt and mint sauce:
300 g of Greek yogurt
2 basil leaves
The juice of half a lemon
1 clove of garlic
4 mint leaves
Extra virgin olive oil
Salt

Description

Meatballs are a dish that can be cooked in so many ways that they deserve entire chapters in recipe books. Among the numerous recipes, there are also light chicken meatballs, a light but appetizing, rich and complete second course, which will allow you to satisfy the most greedy palates and also those most attentive to the line. Light chicken meatballs are simple to prepare even if it is necessary, as in any meatball preparation, to pay attention to some important aspects: the consistency of the grinding, the dose of salt and the perfect browning.

They are all elements that, if underestimated, risk compromising the soft and light flavor of light chicken meatballs! Take the AIA Chicken Fillet Slices and cut them into chunks, then pour them into the mixer. Then add salt, pepper and Parmesan and blend until you get a homogeneous mixture. Now put the mixture in a bowl, add the ricotta and the egg and mix. Now you can form your meatballs; you can make them round and small, or a little flatter, similar to disks.

Now roll them in the breadcrumbs so that they are well covered. Put the meatballs in a baking dish lined with parchment paper and bake, in a hot oven at 200° for 20/25 minutes. In the meantime, prepare the yogurt and mint sauce, following these instructions.

Finely chop the garlic on a kitchen cutting board, along with the basil and mint leaves. Put the chopped mixture in a bowl and squeeze the lemon juice over it; flavor with salt and oil, then incorporate the yogurt

Mix well, in order to amalgamate all the ingredients, and put the yogurt sauce in the refrigerator until it's time to serve it at the table.
