Marinate the AIA pork ribs with honey, soy sauce and herbs for an hour. After this time, drain the ribs from the marinade and transfer them to a baking dish. Bake at 180°C for 40/50 minutes.

Peel the potatoes and cut them into cubes. In a pan, heat a drizzle of oil and add the potatoes and a sprig of rosemary. Mix well and also add a grated fresh ginger. Cover the potatoes with water and adjust with salt and pepper. When the potatoes are cooked and the cooking water has evaporated, mash well until you get a creamy mixture that is not too wet.
