500 g of Happy Ribs - AIA Pork Ribs

Description

If you have never tried the green ribs of San Martino you absolutely must. The pork ribs left to marinate will take on a simply delicious flavor. Serve them for friends with a demanding palate, but also on a day outdoors.

The green ribs of San Martino will even please your mother-in-law and the kids will go crazy for them. You could use this dish, rather quick in its kind, even on any day, when you feel like giving yourself a gastronomic treat.

Procedure

To prepare the green ribs of San Martino without mistakes, trim the meat well and cut into pieces to cook directly.

Prepare a mixture of white and black pepper with which to massage the meat.

Let the meat rest and prepare the marinade: mix the oil, salt, lemon juice, chili pepper, juniper berries and crushed garlic clove. Then pour over the meat soaking it all. Let it rest in the refrigerator for 4 hours.

In the meantime prepare the green sauce: chop the parsley and mix it with an anchovy, a crushed garlic clove and vinegar.

After 4 hours, put the ribs to cook on the grill and once cooked, serve them with the sauce.
