Procedure

In a bowl or a deep dish, beat the eggs with a fork together with salt, pepper, grated cheese and chopped fresh parsley.

Heat a tablespoon of extra virgin olive oil in a large pan and brown the peeled and slightly crushed garlic.

Let the oil flavor for a few minutes and then remove the garlic.

Then pour the eggs into the pan and cook them following the same procedure of the scrambled eggs recipe (here all the steps), then add the two tablespoons of cream and stir; extend the sauce with a tablespoon of water, stir again and serve the fricassee eggs very hot!
