Description

Procedure

Break the eggs into a bowl, add the grated Parmigiano Reggiano, a pinch of nutmeg, salt and pepper and mix lightly.

In a non-stick pan, heat a drizzle of extra virgin olive oil, add the mixture and stir constantly for 5 minutes until they are cooked and creamy.

In a serving dish, spread the slices of cooked ham and overlap the scrambled eggs, decorating as you like with chives.
