8 slices of sandwich bread
80 g of mozzarella
80 g of flour

Description

The chicken toast in carriage is a reinterpretation of the classic Neapolitan street food: the mozzarella in carriage.

In the traditional recipe, the slices of sandwich bread are stuffed with mozzarella, then breaded and finally fried. The result is a golden and crunchy shell that reveals a stringy filling.

With the addition of chicken, you will get a rich second course to pair with a fresh salad for a quick dinner. A toast, in the end, always solves all meals quickly and tastefully, whether they are at home or to take to work, if it is as delicious as the chicken toast in carriage or the oven toast with truffle and cheese meringue even better.

Even though it may seem strange, the chicken toast in carriage is a very simple recipe to prepare. The steps are different, but overall suitable for beginners. Here is the recipe.

For this recipe start with the AIA Chicken Breast and brown it in a pan with a drizzle of oil, a pinch of salt and one of pepper. When it's ready let it cool and then cut it into slices about 1 cm thick.

In the meantime you can cut the mozzarella, always into slices 1 cm thick, so as to let them dry well on a plate covered with absorbent paper. To ensure you eliminate all excess moisture, also blot the slices of mozzarella with more absorbent paper. If you want you can also remove the crust from the sandwich bread.

At this point stuff a slice of bread with a slice of mozzarella (or more, if it's small, but be careful not to overflow from the bread), the chicken and cover with another slice of bread. If you want small bites to serve as finger food, cut the toast into squares or triangles. Repeat the operation to form four toasts.

Now beat the eggs in a dish for a few minutes, you don't need to whip them, just mix them together. Also prepare a dish with the flour and one with the breadcrumbs. Pass the chicken toast in carriage first in the flour, then in the egg and finally in the breadcrumbs and place them on a baking tray lined with baking paper. Bake the chicken toast in carriage at 180°C for 25 minutes or fry them in boiling oil until they are amber and crispy.
