Description

The Bolognese ragu is one of the recipes of our Italian gastronomic tradition that, over time, has had many variants. In this version with turkey, you can enjoy a sauce that is just as good but lighter!

Delicate but tasty, the turkey ragu can be used in many different preparations: to season the pasta, to enrich your lasagna or cannelloni and even to fill the ravioli.

Here are the ingredients and procedure to make a great turkey ragu, perfect for seasoning your pasta dishes, ravioli and the homemade gnocchi!

Procedure

Take the AIA Trito & Co. and work it slightly with your hands in a bowl along with a drizzle of extra virgin olive oil, salt and pepper.

Finely slice the onion, the carrot and the celery, then sauté this mix of vegetables in a casserole with two tablespoons of extra virgin olive oil.

When the sauté has softened, add the turkey mince and let it flavor for a minute, then deglaze with the white wine.

Pour two ladles of broth, adjust with salt and pepper, then cook covered over low heat for 45 minutes, adding broth as needed.

If you want a thicker sauce, also add a couple of tablespoons of tomato sauce.
