300 g of champignon mushrooms
1⁄2 onion
20 g of extra virgin olive oil
100 g of dry white wine
300 g of vegetable broth

Start by cleaning the mushrooms and cutting them into slices. Also cut the onion very thin and let it fry for a few minutes in a pan until it becomes transparent. Then add the mushrooms and mix well. Brown the mushrooms and then deglaze with the white wine and let it evaporate. Adjust with salt and pepper and finish with the finely chopped parsley.


Cover the pan with the lid and let it cook for about 15 minutes on low heat.


To cook the speck and potato meatballs heat a pan with a drizzle of oil, then add the meatballs and let them cook for 10 minutes stirring them for even cooking. When the meatballs are cooked add the mushrooms and finish cooking together.
