Procedure
Clean and wash the zucchini, then slice them. Boil a pot of slightly salted water and cook the zucchini for 5 minutes. Drain them and let them cool down.
In the meantime, break the eggs into a bowl and then add the grated Parmesan, the diced scamorza, the cooled zucchini, salt and pepper. Beat with a fork until you have a homogeneous mixture. Unroll the puff pastry and place it in a tart mold directly with the baking paper.
Prick the base and pour the mixture. Sprinkle the entire surface of the cake with grated Parmesan, breadcrumbs and finish with a drizzle of oil. Now bake for about 35 minutes at 180° until the pastry is cooked and golden. Bon appetit!
