Procedure
Wash and cut the rabbit into small pieces. Wash the potatoes and cut them into cubes.
In a non-stick pan, heat the olive oil together with the crushed garlic clove and two sprigs of rosemary. Start cooking the pieces of rabbit and brown for 5 minutes over high heat, turning the meat from time to time.
When the rabbit has evenly browned, deglaze with the white wine. Add the potatoes and season with salt and pepper. Lower the heat for a low flame cooking and cover with the lid.
Cook the pan-fried rabbit with potatoes for about thirty minutes, turning the meat and potatoes from time to time to prevent them from sticking. If the bottom should dry out too much, you can add water or hot vegetable broth.
