Description
The leek and bacon frittata is a great second course to bring to the table when you have little time and a lot of desire for taste. Good hot, but also perfect cold in the aperitif buffet, the frittata with leeks and smoked bacon is also an ideal single dish to put in the lunch box.
Leeks are very versatile in the kitchen and lend themselves very well to being put in the frittata. This leek and bacon frittata can also be prepared in the oven to be more practical and light.
Procedure
First of all, clean the leeks and cut them into thin slices. In a large pan, pour a drizzle of oil and add the leeks. Let the leeks stew until they become soft, then let them cool. In a bowl, beat the eggs, add the grated cheese, the cooked leeks and adjust with salt and pepper. Mix the mixture well then grease a pan with a drizzle of extra virgin olive oil and brown the diced smoked bacon.
When the bacon is well crispy, pour the egg and leek mixture into the pan. Cover with a lid and cook the frittata over medium heat for 5 minutes per side.
