Procedure
Stuff the chicken with the rosemary sprigs and season it with salt and pepper.
In a large bowl pour the coarse salt and the fine salt, add the thyme and a grated lemon zest, add the sage leaves and finish with the two egg yolks. At this point mix all the ingredients well.
On the base of a rectangular baking tray, arrange a layer of flavored salt, place the chicken on top of it and cover it with the remaining flavored salt, compacting it well.
Cook the chicken in a flavored salt crust for an hour and 30 minutes at 220°C.
Once this time has passed, remove the chicken from the oven and remove the salt crust with the help of a knife.
