14 zucchini flowers

150 g of 00 flour
220 ml of water

Description

First of all, prepare the batter: in a bowl pour the flour, water, egg yolk and mix with a whisk to obtain a smooth and lump-free mixture.

Now proceed with cleaning the zucchini flowers, removing the stem, eliminating the external pistils and the internal bud. In a pan pour the peanut oil and heat it until it has reached a temperature of 170°C (you can measure the temperature with a kitchen thermometer).

One at a time, dip the zucchini flowers in the batter and then in the hot oil, turning them from time to time so that they are golden on all sides. Remove them from the oil with a slotted spoon and place them on a sheet of absorbent paper.
