Procedure
First, cut the AIA rabbit into pieces that you will cook in a pot full of salted water. In the meantime, peel the potatoes and cut them into pieces that you will put in a basket over the pot containing the rabbit. Cook for a quarter of an hour.
Clean the vegetables and herbs. In a baking dish, pour the pieces of rabbit and potatoes, add the sliced onion, garlic cloves, chopped tomatoes, sliced peppers, and herbs. Season with a drizzle of extra virgin olive oil, salt and bake in a preheated oven at 200°C for about half an hour.
