Procedure
In a bowl pour the flour, with a pinch of salt, the sugar, the butter cut into pieces and mix well so as to blend all the ingredients well. In the center of the flour pour a yolk and an egg and work with your hands until you get the shortcrust pastry for your tart. Wrap the shortcrust pastry in cling film and let it rest in the fridge for about half an hour.
Butter a tart mold and inside it spread the shortcrust pastry that you will prick with the tines of a fork. Now pour a generous layer of apricot jam and garnish with strips of shortcrust pastry. Bake in a preheated oven at 180°C for about 35 minutes.
