Description

Protein pancakes are among the most loved breakfasts in the world, perfect to enjoy with fresh fruit, honey or maple syrup. In this version they are even softer thanks to the use of AeQ PROTEIN egg whites which make the dough light and rich in proteins. The secret of their consistency lies in the whipped egg whites which incorporate air and allow you to obtain tall and soft pancakes, almost like a cloud. Ideal for a protein breakfast, but also for a light and nutritious snack, they can be prepared in a few minutes and can be easily customized with fruit or other ingredients of your choice.

Procedure

Whip the egg whites: 
start by whipping the egg whites until stiff with a pinch of salt. This step is essential because the incorporated air will make the pancakes tall and fluffy.

Mix the base: 
in a separate bowl, combine the yogurt (or milk) with the sifted flour, honey or maple syrup, yeast and a little lemon zest. Mix until you obtain a thick and homogeneous mixture.

Incorporate the egg whites: 
add the whipped egg whites in two stages: the first spoonful is used to make the dough softer, while the rest is incorporated with delicate movements from bottom to top so as not to dismantle the mixture.

Add the blueberries: 
add the fresh blueberries to the mixture, mixing very delicately to distribute them without losing volume.

Cook the pancakes: 
heat a non-stick pan and cook the pancakes over medium-low heat.
Being very soft and full of air, they need slow and uniform cooking to cook well even in the center. Serve them with fresh blueberries, dried fruit or a drizzle of honey.
