High-protein pizza with egg white protein

Egg white pizza combines the lightness of whipped egg whites with the rustic consistency of wholemeal flour. Thanks to the two-stage cooking, the base remains compact and ready to accommodate the desired seasoning. This recipe is ideal for those looking for a high-protein single dish, enriched by the Mediterranean flavor of Taggiasca olives and cherry tomatoes.
Procedure
Preheat the oven: set the oven to 180°C in static mode
Whip the egg whites: in a bowl, whip the egg whites with salt and pepper to taste.
Incorporate the flour: add the wholemeal flour slowly, incorporating it with a spatula so as not to dismantle the mixture.
Form the base: on baking paper, create circles with the dough (approximately 3 20cm pizzas). You can use a mold or baking dish to help you with the shape.
First cooking: Bake in the oven for about 15 minutes each.
Season: remove from the oven and decorate with tomato sauce, light mozzarella, olives and cherry tomatoes.
Finish cooking: bake for another 5-10 minutes until golden brown and the ingredients have completely melted.
