Bicolor Crêpes with Albume Protein

Ingredients
Description
The two-tone sweet crêpes are characterized by an original spiral effect obtained by combining a white oat dough with one enriched with cocoa. The light consistency goes perfectly with the creaminess of the Greek yogurt and the freshness of the strawberries. It is the ideal choice for those who want to start the day with a touch of creativity and a recharge of protein energy.
Procedure
Prepare the doughs: in two separate bowls, mix the ingredients for the white dough and those for the brown dough.
Use the piping bag: put the brown (dense) dough in a piping bag to make it easier to form the spiral.
Create the spiral: preheat a non-stick pan with a drop of oil and form the spiral with the brown dough.
Add the dough: after about 30 seconds, when the spiral has solidified, pour in a ladle of white dough and swirl the pan to make it uniform.
Cook: Let cook for about 1 minute, then turn the crepe to the opposite side.
Garnish: plate and decorate with yogurt, strawberries and sugar-free cocoa cream.

Suggestions
Why does the brown dough have to be thicker?
The greater density allows the spiral to stay in shape and not mix immediately with the other dough.
Which milk is best to use?
The recipe suggests oat milk, but you can use any milk of your choice as per your preference.
Is oil necessary in the pan?
Yes, a drop of oil on a well-non-stick pan helps achieve perfect cooking and makes it easier to turn the crepe.
